Description of the Project
Mukado Wines as a project is based on the traditional as well as modern wine making dynamics. It is
located in the best terroir of Georgia – AOC MUKUZANI. It revives the family and national traditions
directions and will offer an unparalleled marketing strategy and story behind the products.
The winery characteristcs
‐ Production General:
‐ Annual grape in‐take: 800 – 1000 tones
‐ Total final holding capacity 1 220 000 L from the Vintage 2015
‐ Vintage 2014 will be met with 460 000 L capacity, the rest to be added as we go. All stainless steel of AISI 304 (main body) and AISI 316 (tank dome).
‐ The holding capacity/volume difference to added in Y 2015 and is approx. 800 000 L
‐ Other equipment:
o Reception:
- Crushing and de‐stemming: AMOS, Germany
- Pneumatic membrane press: Defranceschi, Italy
- Reception hopper and marc/residue conveyors: PIM, Bulgaria
‐ Refrigeration: SAKURA, Japan.
o The entire winemaking process will be controlled by T‐control in real time.
‐ Generally, 40% of the capacity will be occupied with the carry over stock for the aged super
premium wines.
‐ Separate climatized oak barrel chamber for 600 barrels, total of 180 000 L oak matured topquality
wines.
‐ Winemaking:
o Modern un‐oaked – volumes per market request
o Modern oaked ‐ volumes per market request
o Traditional Georgian Kvevri – 30 000 L fermentation capacity
‐ Bottling line already installed:
o Finotech – Stroh, Germany. (an extremely highly regarded producer for small and
medium wineries. The line is equipped with my own innovation to prevent oxidation
of wines while bottling – rare technical advantage).
o Cold sterile filling via membrane system for still dry wines as well as semi‐dry and
semi‐sweet wines. NO ISO‐Barric filling (i.e. no sparkling wine filling)
o 2 400 – 2 800 BPH.
o Closure both: cork and screw
o Hooding both: Polylaminate/metallic and PVC
‐ Labeling:
o Front
o Back
o Third station for medallions or specifically Russian excise mrks.
‐ Warehousing for bottled wines to be aged post bottling 300 000 bottle capacity.
‐ Warehousing for bottled wines to be dispatched soon after bottling 250 00 bottle capacity.
